Discovering The Red Pepper Deli: From Dreams to Deli Delights

Nestled at the corner of Cragmont and Main Street, The Red Pepper Deli, Cafe & Catering has been a beloved destination for sandwich and soup lovers since 2000. Founded by John and Lori Heitz, this vibrant eatery was born from their desire to enhance Madison’s dining scene. After relocating from Cincinnati, John, a culinary school graduate originally from Madison, and Lori recognized the potential of the old Bello's building and transformed it into a deli that quickly became a community favorite. 


With a well-thought-out business plan and a clear division of responsibilities—John focused on the kitchen while Lori managed operations—they set out to make their vision a reality. "We went from bank to bank for a loan, presented our business plan and we were denied by most banks until Nancy Underwood at National City said she loved the ideas and that we absolutely needed this in Madison,” said Lori, “We used our savings and received a small loan and with massive amounts of hard work and sacrifice the rest is history!”

Upon entering Red Pepper, you’re greeted by a warm and inviting atmosphere, perfect for a quick lunch with a friend or a business meeting over some bow tie pasta. The dedicated staff, many of whom have been with the team for years, enhance the welcoming vibe.

The menu features a diverse selection, from signature sandwiches and wraps to homemade soups and sides, all crafted with fresh ingredients and care. Lori’s favorites include the bow tie pasta salad and the Santa Fe turkey sandwich, while John is partial to their homemade soups and the Vampire Slayer sandwich. Vegetarian options and sweet treats are also available, ensuring there’s something for everyone!


Red Pepper’s catering services are a hit for any occasion. They are customizable to meet your event needs and showcase their delicious sides and desserts.

As one of four “Red Restaurants” owned by the Heitzes, Red Pepper holds a special place in their hearts. “I love the mornings when I go in and just have morning chats,” said Lori. “We have met so many wonderful people! Our customers and employees have become family and close friends to us.” 


Celebrating nearly 25 years in Downtown Madison, Red Pepper continues to deliver consistent service, delicious meals, and, of course, sandwiches served with a pickle, chips, and a smile!
